Healthy Pumpkin Oat Cookies

I really try to have healthy options for our kids to snack on every day. The one thing I’d like to I would change about this recipe is the sugar. Maybe I’ll do some experimenting and come up with a sugar-free version.

We used chia seeds in lieu of eggs, but if you want to use eggs instead of chia seeds, 2 eggs will suffice 😁 You can watch our video here to see this recipe in action with a passel of kiddos!

Honestly, I was sort of expecting this recipe with two young boys to be a disaster. But they’re getting so big and so good at helping. I’m probably getting more relaxed, too!

To make these Pumpkin Oat Cookies, you’ll need:

  • 2.5 cups flour
  • 2.5 cups oats
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp apple pie spice (or cinnamon, if you prefer)
  • 1 tsp salt
  • 1.5 cups sugar
  • 1 cup olive oil
  • 2 cups pumpkin
  • 3 tbsp chia seeds
  • 3 tbsp water

(Mix the water and chia seeds together as an egg substitute and let it set)

It’s probably more “correct” to mix the ingredients in a particular order and sequence, but I usually just dunk them together and mix em.

Bake at 350 F for 15 minutes.

If you want cookies with a more firm texture, add more oats! These come out a little crumbly.
